If there was one recipe I had to include in this cookbook, it was going to be my famous chickpea brownies. These have the richness and indulgence of a traditional brownie, but healthier-for-you ingredients. Guess what? You can’t taste the chickpeas at all.

Ingredients
- 1 (15 oz) can chickpeas, rinsed and drained
- ½ cup almond butter or peanut butter
- ¼ cup oat or almond flour
- ¼ cup cocoa powder
- ½ cup maple syrup
- 1 tbsp applesauce
- 1 tsp pure vanilla extract
- ¼ tsp baking soda
- ¼ tsp baking powder
- ¼ tsp pink salt
- ½ cup vegan chocolate chips, plus ½ cup for topping

METHOD
- Preheat the oven to 350°F (175°C). Line a 9 x 9-inchbaking pan with parchment paper.
- Add all the ingredients—except the chocolate chips—into a food processor. Blend until completely smooth.
- Fold in the chocolate chips, then pour into the prepared baking dish. Top with the extra chocolate chips.
- Bake for 20 to 25 minutes. When they are done, letthem cool for about 20 minutes before cutting intothem.
