Famous Chickpea Brownies

Elevate your brownies with this recipe from HealthyGirl Kitchen.

If there was one recipe I had to include in this cookbook, it was going to be my famous chickpea brownies. These have the richness and indulgence of a traditional brownie, but healthier-for-you ingredients. Guess what? You can’t taste the chickpeas at all.

Cook Time: 25 minutes

Ingredients

  • 1 (15 oz) can chickpeas, rinsed and drained
  • ½ cup almond butter or peanut butter
  • ¼ cup oat or almond flour
  • ¼ cup cocoa powder
  • ½ cup maple syrup
  • 1 tbsp applesauce
  • 1 tsp pure vanilla extract
  • ¼ tsp baking soda
  • ¼ tsp baking powder
  • ¼ tsp pink salt
  • ½ cup vegan chocolate chips, plus ½ cup for topping

 

METHOD

  1. Preheat the oven to 350°F (175°C). Line a 9 x 9-inchbaking pan with parchment paper.

  2. Add all the ingredients—except the chocolate chips—into a food processor. Blend until completely smooth.

  3. Fold in the chocolate chips, then pour into the prepared baking dish. Top with the extra chocolate chips.

  4. Bake for 20 to 25 minutes. When they are done, letthem cool for about 20 minutes before cutting intothem.
