Protein Berry Pancakes

Start your morning right with these pancakes, packed with nutrient-rich ingredients and juicy berries.

Serves: 1

Cooking time: 10-15 minutes

Ingredients

  • 1 egg
  • ¼ cup (60 ml) skim milk
  • 1⁄3 cup (55 g) wholemeal flour
  • ½ teaspoon baking powder
  • ½ teaspoon ground cinnamon
  • 1 tablespoon vanilla whey protein powder
  • 1 tablespoon extra-virgin olive oil
  • ½ cup (75 g) mixed frozen berries
  • 1 tablespoon reduced-fat ricotta cheese, to serve
  • 1 teaspoon sugar-free maple syrup, to serve (optional)

Method

  1. Place egg and milk in a medium bowl and whisk until combined. Whisk in flour, baking powder, cinnamon and protein powder until well combined and smooth.
  2. Heat the oil in a large non-stick frying pan over medium heat. Ladle ¼ cup (60 ml) amounts of batter into pan. Cook pancakes for 2–3 minutes each side, or until golden and cooked through.
  3. Meanwhile, place frozen berries in a microwave-safe dish, cover and microwave on high for 30 seconds or until warmed through.
  4. Serve pancakes topped with ricotta, warm berries and maple syrup (if using).
