Ingredients
- 1 egg
- ¼ cup (60 ml) skim milk
- 1⁄3 cup (55 g) wholemeal flour
- ½ teaspoon baking powder
- ½ teaspoon ground cinnamon
- 1 tablespoon vanilla whey protein powder
- 1 tablespoon extra-virgin olive oil
- ½ cup (75 g) mixed frozen berries
- 1 tablespoon reduced-fat ricotta cheese, to serve
- 1 teaspoon sugar-free maple syrup, to serve (optional)
Method
- Place egg and milk in a medium bowl and whisk until combined. Whisk in flour, baking powder, cinnamon and protein powder until well combined and smooth.
- Heat the oil in a large non-stick frying pan over medium heat. Ladle ¼ cup (60 ml) amounts of batter into pan. Cook pancakes for 2–3 minutes each side, or until golden and cooked through.
- Meanwhile, place frozen berries in a microwave-safe dish, cover and microwave on high for 30 seconds or until warmed through.
- Serve pancakes topped with ricotta, warm berries and maple syrup (if using).
