Apple Crumble Bowls

Tender baked apples, a crunchy oat topping and a hit of cinnamon – these Apple Crumble Bowls make a delightfully healthy treat.

Makes: 2
Prep time: 10 minutes
Cooking time: 20 minutes

Ingredients

  • 2 small green apples, peeled, cored, chopped
  • 2 teaspoons lemon juice
  • 1 teaspoon unsalted butter
  • ½ teaspoon ground cinnamon

Crumble:

  • ½ cup (50 g) rolled oats
  • 1 tablespoon wholemeal flour
  • 2 tablespoons brown sugar
  • 2 tablespoons natural almonds, chopped
  • ¼ teaspoon ground cinnamon
  • 1 tablespoon softened unsalted butter

To serve:

  • 320 g low-fat high-protein yoghurt (plain or vanilla flavoured)

Method

  1. Preheat oven to 180°C. Place apples in a medium bowl. Drizzle over the lemon juice and set aside.
  2. Melt the butter in a medium saucepan over medium heat. Add the apples and cinnamon and cook, stirring occasionally, for 5 minutes or until apples are just softened. Set aside.
  3. To make the crumble, combine the oats, flour, sugar, almonds and cinnamon in a medium bowl. Add the butter and rub into flour mixture using fingertips until mixture resembles coarse crumbs.
  4. Lightly spray two ½ cup (125 ml) capacity ovenproof ramekins with olive oil. Divide apple mixture between ramekins and top with crumble mixture. Bake for 20 minutes or until topping is golden.
  5. Serve crumbles with the yoghurt.
