A healthy, easy breakfast crumble from Filling Meals by Lindsay Wilson.
This meal just makes me smile! It’s basically a berry compote turned into a crumble. I kept the cooking time to under 20 minutes, so it’s actually a viable weekend breakfast in cold weather. The chia seeds really make it work.

Ingredients
- 150g frozen mixed berries
- 1 apple, unpeeled, chopped into small chunks (100g)
- Juice of ½ orange
- 30g instant porridge oats
- 1 egg
- 1 tbsp maple syrup
- 10g chia seeds
- ½ tsp ground cinnamon
- 100g Greek yogurt (0% fat)
Method
- Add the berries, apple and orange juice to a small saucepan. Cook over a high heat for 10 minutes until the fruit starts to form a stew.
- Meanwhile, preheat the oven to 200°C fan/220°C/gas7.
- In a bowl, mix the oats with the egg and maple syrup.
- Remove the fruit mixture from the heat and add the chia seeds and cinnamon. Mix well so the chia seeds absorb the hot fruit mix.
- Transfer the fruit mix to a small, deep baking tin, about 18 x 13 x 5cm, spreading it to cover the base, then cover with the oat mixture.
- Bake for 10 minutes.
- You can also make this in the air fryer. Preheat the air fryer to 200°C. Place the fruit mix in an air-fryer safe baking tray, top with the oat mixture and air fry for 10 minutes.
- Serve with the yogurt on the side.
Top Tip: Try a single serving the first time you make this, but if you life it, it’s a natural to prep at much greater scale so you can enjoy it whenever you want.
