Piña Colada Happy Hour Milkshake

Warm tropical breezes, sandy beaches, and a piña colada milkshake-does it get any better than this?

Sometimes, I make myself a Piña Colada Happy Hour Milkshake on a cold winter's day and take a mental vacation someplace sunny and warm. Put on some tropical music, and you'll convince yourself you're smelling the salty sea air and looking up at cloudless blue skies.

SERVES: 1
PREP TIME: 5 minutes
CHILL TIME: 5 minutes

INGREDIENTS

Milkshake:

  • 3 scoops vanilla ice cream (about 1 cup)
  • 1½ ounces coconut rum
  • 1½ ounces pineapple rum
  • 1 tablespoon cream of coconut

Toppings:

  • Whipped cream
  • Pineapple wedge
  • Pineapple frond

METHOD

  1. Place a 12-ounce glass in the freezer for 5 minutes to chill.

  2. Add all the milkshake ingredients to a blender, and blend on high until smooth.

  3. Carefully remove the chilled glass from the freezer.

  4. Pour the blended milkshake into the chilled glass.

  5. Add the toppings to the milkshake. Begin with a generous amount of whipped cream on top, then garnish with a pineapple wedge and pineapple frond.

  6. Add a straw, and that's a Piña Colada Happy Hour Milkshake!
