Fitwaffle's Cinnamon Swirl Mug Cake

Fans of cinnamon rolls will love this easy mug cake from Fitwaffle, made in the microwave this simple sweet treat is ready in minutes.

This mug cake is super soft and moist, packed with swirls of sweet cinnamon. If you love cinnamon and warm cake, you have to make this one.

INGREDIENTS

  • 60g (6 tbsp) plain (all purpose) flour, hear-treated (see page 13 of Fitwaffle's No-Bake Baking)
  • 45g (3 tbsp) granulated sugar
  • ½ tsp baking powder
  • 60ml (4 tbsp) water
  • 40ml (3 tbsp) oil or melted butter
  • ½ tsp vanilla extract

For the cinnamon swirl:

  • ½ tbsp melted butter
  • 1 tbsp light brown sugar
  • ¼ tsp ground cinnamon

For the cinnamon sugar:

  • 1 tsp granulated sugar
  • ⅛ tsp ground cinnamon

METHOD

  1. Put all the ingredients for the cake into a small mixing bowl and beat together until smooth.

  2. In a small ramekin or bowl, mix together the ingredients for the cinnamon swirl until combined.

  3. Pour half the cake batter into a large microwave-safe mug or split between 2 smaller mugs if making 2.

  4. Dollop or pipe half the cinnamon swirl mix on top of the batter.

  5. Pour the remaining batter on top and smooth it out, then pipe the remaining cinnamon swirl on top in a spiral pattern.

  6. Mix together the sugar and cinnamon to make the cinnamon sugar, then sprinkle this on top.

  7. Microwave on medium for 1 minute 20 seconds, or until there’s no wet batter remaining. Check your mug cake at the 1 minute mark to make sure it doesn’t overflow.

  8. Leave to rest for 1 minute, as it will be very hot, then dig in and enjoy!
