Roasted corn and elderflower iced tea

You can get Korean roasted corn tea from Asian supermarkets or online – it tastes a little like drinking popcorn.

It combines perfectly with the flavours of elderflower and mint for a beautifully aromatic cool drink. If you want to serve it as a cocktail to evening guests, you can switch the elderflower cordial for St Germain liqueur.

Serves: 4

Ingredients

  • 2 Korean roasted corn tea bags
  • 1 litre/35fl oz/4 ¼ cups cold water
  • 120ml/4 fl oz/ ½ cup elderflower cordial
  • Ice cubes and springs of mint, to serve

Method

Put the tea bags in a jug and top up with the cold water. Place in the fridge for several hours to chill – the longer you leave it, the stronger the corn flavour will get.

Once the tea has chilled (and infused the water in the process), and the elderflower cordial.

To serve, fill 4 highball glasses with ice cubes and pour in the tea, then garnish with the mint sprigs.
