Banana and oatmeal pancakes

Pancakes that are gluten free, sugar free, dairy free but totally delicious!

Banana and oatmeal pancake are a hearty, healthy, satisfying and family-friendly breakfast. They're also gluten free, sugar free, dairy free and absolutely delicious. If walnuts aren't your favourite, you can swap in other nuts, berries, or chocolate chips.

Cook Time: 10 minutes
Makes: 3 servings (about 9 pancakes)

INGREDIENTS

  • 2 ripe medium-large bananas
  • 1 cup egg whites
  • 1 cup gluten-free rolled oats
  • 1/2 teaspoon cinnamon
  • 1 teaspoon baking powder
  • pinch of sea salt
  • 1/4 cup chopped walnuts
  • 1 tablespoon coconut oil

 

METHOD

  1. Combine the bananas, egg whites, oats, cinnamon, baking powder, and salt in a high-spped blender, and blend until you have a thick batter. Stir in the walnuts or any other add-ins you like.

  2. Heat large nonstick skillet over medium-heat and lightly coat it with coconut oil. Add 1/4 cup of the batter and repeat, adding as many pancakes as you can without overcrowding.

  3. Cook for 2 minutes or until small bubbles begin to form on the top. Flip and cook for another 2 minutes, until golden brown and set through. Serve with your favorite pancake toppings and enjoy.
