Teddy Lee

Teddy Lee is the founder of Maki & Ramen. From an early age, he worked in his family’s restaurant kitchens, learning not just techniques but the rhythm and teamwork of hospitality. Later, his passion took him to Tokyo, where he trained at a prestigious sushi academy. There, Teddy discovered a lifelong love for Japanese cuisine – the precision, respect, and artistry behind every dish. In 2015 Teddy founded the first Maki & Ramen in Edinburgh. Since then, the company has expanded to over 14 restaurants in the UK and UAE, offering delicious and dependable Japanese food for every occasion.
