Pasta and homemade pesto

Nothing beats homemade pesto and its fabulous fresh taste. This simple and delicious recipe is perfect for young chefs to try at home.

Ingredients

  • large handful of basil leaves
  • 2 tbsp pine nuts, lightly toasted
  • 2 garlic cloves
  • pinch of sea salt and freshly ground black pepper
  • 100g (31⁄2 oz) hard mature cheese, grated
  • 200ml (7fl oz) extra virgin olive oil
  • 400g (14oz) pasta shapes of your choice

Put the basil, pine nuts, garlic, and seasoning in a food processor and whizz to form a paste.

Add the cheese to the paste and whizz again.

Slowly drizzle in the oil and whizz until it forms a sauce consistency. Add more oil if it is too thick.

Carefully boil a large pan of water, then add the pasta and cook for 12 minutes, or follow the pack instructions.

Drain the pasta carefully, put it back in the pan, and toss it with the pesto. Serve immediately.
