1 kg apples
250 g white onions
60 g raisins
60 g sultanas
60 g currants
60 g dates
125 g brown sugar
2 teaspoons curry powder
2 teaspoon ground cloves
1 dessertspoon ground allspice
2 tablespoons ground mixed spice
2 teaspoons minced garlic
1 teaspoon ground cayenne pepper
2 cups malt vinegar
MAKES 4–6 CUPS
Put apples, onions, raisins, sultanas, currants and dates through mincer or food processor until coarsely minced.
Place mixture in a preserving pan with the remaining ingredients and simmer for 1 hour, until well blended and slightly thickened. Place in sterilised jars, cover with a layer of paraffin wax and seal.
Store in a cool, dark place. Leave for at least 2 weeks before using to allow the flavours to develop. Will keep for 12 months at least.
